persone)&lt;/span&gt;&lt;br /&gt;&lt;div style="text-align: justify;"&gt;2 melanzane medie viola&lt;br /&gt;100 g di prosciutto cotto&lt;br /&gt;100 g di fontina&lt;br /&gt;pan grattato q.b.&lt;br /&gt;olio extravergine d'oliva q.b.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;br /&gt;&lt;div style="text-align: justify;"&gt;Per  prima cosa lavate e tagliate le melanzane a fette, circa un centimetro, e friggetele in abbondante olio.&lt;br /&gt;Una volta fritte, lasciatele scolare in un piatto con carta assorbente, successivamente prendete le varie fette e farcitele una alla volta con fontina e prosciutto cotto.&lt;br /&gt;Dopo aver fatto questa operazione mettete le melanzane in una teglia da forno con un poco di olio e una spolverata di pan grattato sia sulla base della teglia che, successivamente, a copertura delle melanzane.&lt;br /&gt;Infine mettere in forno ben caldo per 5 - 7 minuti.&lt;br /&gt;&lt;br persone)&lt;/span&gt;&lt;br /&gt;&lt;div style="text-align: justify;"&gt;3 carote&lt;br /&gt;1 cipolla&lt;br /&gt;200 g di salsiccia dolce&lt;br /&gt;100 g di salsiccia piccante&lt;br /&gt;5 pomodori freschi&lt;br /&gt;1 cucchiaio d'olio extravergine di oliva&lt;br /&gt;1 bicchiere di vino bianco&lt;br /&gt;sale q.b.&lt;br /&gt;una foglia di basilico&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;br /&gt;&lt;div style="text-align: justify;"&gt;Per prima cosa mettete in una padella abbastanza grande il cucchiaio d'olio e fate rosolare la cipolla e le carote tagliate a cubetti insaporendo il tutto con un pizzico di sale.&lt;br /&gt;Nel frattempo togliete la salsiccia dal budello e versatela nella padella, con un cucchiaio di legno sminuzzate la salsiccia che in parte è rimasta in pezzi interi e fatela amalgamare con il soffritto di carote e cipolla.&lt;br /&gt;Quando la salsiccia risulta dorata allora è arrivato il momento di sfumarla con il vino bianco, continuerete a girare il tutto finchè il vino evapori.&lt;br /&gt;Una volta evaporato il vino e fatto così che la salsiccia si insaporisse con il composto inserire i pomodori tagliati precedentemente a cubetti e salare il tutto quanto basta.&lt;br /&gt;Aggiungere un poco d'acqua e se è necessario aggiungere un cucchiaio di passata di pomoro se vi sembra che il sugo non si sia colorato abbstanza.&lt;br /&gt;Una volta cotta la pasta scolarla e saltarla in padella con il sugo che abbiamo preparato, impiattare e coronare il piatto con la foglia di persone)&lt;/span&gt;&lt;br /&gt;4 Peperoni dolci (rossi, verdi o gialli)&lt;br /&gt;300 g di riso per arancini&lt;br /&gt;200 g di carne tritata di maiale&lt;br /&gt;150 g di spinaci freschi o congelati (se congelati 5 o 6 cubetti)&lt;br /&gt;2 pomodori&lt;br /&gt;1 bicchiere di latte&lt;br /&gt;mezzo bicchiere di farina&lt;br /&gt;125 g di burro&lt;br /&gt;sale, olio q.b.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;br /&gt;Per prima cosa prendete i peperoni, lavateli, tagliateli per lungo a metà togliendo il gambo e metteteli da parte.&lt;br /&gt;Successivamente cominciate a mettere il riso a cuocere in abbondante acqua bollente salata, una volta cotto scolatelo e lasciatelo raffreddare in un contenitore. Mentre il riso riposa, sempre in acqua calda fate cuocere gli spinaci freschi o congelati, una volta cotti questi ultimi si può passare a preparare tutto il composto. Prendete una padella, mettete dell'olio d'oliva, cipolla e una carota tagliata a dadini fate soffriggere per un poco e subito dopo inserite nella padella la carne tritata.&lt;br /&gt;Dopo aver dorato la carne tritata aggiungere nella stessa padella gli spinaci ben scolati, un bicchiere di latte e il sale. Mescolate continuamente il composto finchè non si asciuga tutto il latte che abbiamo aggiunto. Asciugato il latte aggiungiamo il riso e i 2 pomodori tagliati a pezzetti, amalgamiamo perfettamente il tutto e lasciamo riposare a fuoco spento in padella il nostro composto. Nel frattempo con il latte, la farina e il burro facciamo una semplice besciamella che andremo una parte a mescolare con il composto di prima e un'altra parte la lasceremo per ricoprire i nostri peperoni.&lt;br /&gt;Dopo aver effettuato tutto ciò andiamo a riempire i peperoni divisi a metà con tutto il nostro composto, e versiamo sopra ogni peperoni la besciamella rimasta. Intanto mettiamo un leggero strato di olio nella teglia dove andremo a mettere i peperoni che dovranno cuocersi in forno a 200 gradi per circa 40 minuti. Quando il riso lo richiede aggiungere il brodo bollente poco alla volta. Ungete una tortiera con olio e disponete a raggio le alici aperte, cospargetele con pane grattato, origano, pepe, sale e qualche cucchiaio di passata di pomodoro. Ripetete la stessa operazione finchè non finite le alici, formando così vari strati.
